Cadence Gourmet’s CEO, David Wells, was always amazed by the exceptional taste of the frozen food in Europe. As a veteran food executive, he had imported a range of such frozen products for other companies, but he kept running into regulatory limitations on what could be brought into the U.S. Sensing there was great demand for superior frozen food, David began to study the European freezing technology itself. He quickly realized that there was a transformative market opportunity to leverage the European’s liquid nitrogen-based approach, as the common freezing techniques in American food production had not experienced significant innovation in decades.
As luck would have it, the perfect opportunity soon presented itself. One of David’s former clients, a prominent fast casual restaurant business, revealed that it was struggling with food consistency across its hundreds of locations. Its salsas would wind up being too spicy, pasta salads lacking salt, or vegetables being cut incorrectly. A common problem in the foodservice industry, this usually resulted in wasted money and unhappy customers. David knew that by applying better freezing technology and culinary expertise, this widescale problem could be solved.
He quickly assembled an all-star team, led by Kimberly Shelton, and they set out to replicate the restaurant chain’s most problematic foods. Within a year, the Cadence Gourmet culinary team had created perfect frozen replacements for some of the most complex items on the menu and rolled them out nationwide. No longer needing to make each dish from scratch, restaurant locations could simply heat and serve the frozen food in a matter of minutes.
Soon another opportunity surfaced, this time in the retail grocery market space. Kroger was introducing a fresh and local concept, called Main & Vine, and delicious frozen food was a potential fit. Instead of replicating dishes for restaurants, this meant that Cadence Gourmet could create its own dishes, and shoppers could buy the frozen food directly from the grocery store.
In just two days, the initial shipment of product sent to Main & Vine completely sold out. Customers loved the simplicity, convenience, and, above all else, the incredible taste of the frozen food. Since then, Cadence Gourmet has expanded to nearly 50 select grocery stores, as part of Kroger’s “Easy for You!” program.
